KompaanArtisan bakery

Today’s bread, and what time it leaves the oven.

Artisan bakery in Florianópolis [CONFIRM neighbourhood]. Two questions, one page: what is baked today, and what has to be ordered ahead.

Stock photograph. What this position actually needs is the crumb, cut open in cross-section under raking light — and it has to be Kompaan’s, because the crumb is the argument. [CONFIRM real photography]

Bake calendar

What comes out of the oven this week.

Today’s column is highlighted, and São Paulo time governs it rather than the visitor’s — someone reading this from Lisbon at 23:00 must not be shown tomorrow’s bread.

Every entry below is a placeholder. We do not know which breads Kompaan bakes, on which days, what time they come out, or whether they sell out. Every name and time is a [CONFIRM]. The whole schedule lives in one object at the top of script.js, so they can edit it themselves without touching the HTML. Our breads

The full line.

Each card carries flours, weight, method, bake days, allergens and price. Not one of those fields was filled in by us.

No loaf, flour, weight, hydration, fermentation time or price has been invented. A long-fermentation bakery lives on process credibility, which makes fabricated technical detail more dangerous here than anywhere else. The cards ship built and empty.

Pre-orders

Your bread sells out. That should be a waiting list, not a lost sale.

When the shelf empties at 11:00, the demand arriving at 15:00 simply evaporates. A pre-order turns that sold-out state into tomorrow’s confirmed order.

Lead time and cutoffOrders by [CONFIRM cutoff time] with [CONFIRM minimum lead time] notice. Pickup: [CONFIRM window]. Deposit: [CONFIRM whether one is taken, and how much].

The form composes the message and opens WhatsApp. It sends nothing on its own and confirms nothing — the bakery confirms, by replying.

The process

What can be said, and what cannot.

This section is deliberately empty. Natural fermentation, long fermentation, starter age, stone milling: none of it is confirmed, and a wrong process claim is the most expensive thing an artisan bakery can publish. There is also no photograph of a starter jar anywhere on this site — a levain photo is a process claim. The fields below fill themselves in the moment Kompaan confirms.

Grain and flour

Where the flour comes from.

If there is a local mill or stone milling involved, that is a real differentiator — which is exactly why it cannot be assumed.

Why Kompaan

Three reasons — once they tell us what they are.

  • Rustic round loaves with a dark crust and wheat ears on a dark surface — stock photograph, not a Kompaan product

    [CONFIRM differentiator 1]

No “baked fresh” and no “natural fermentation” until there is written confirmation.

  • Bakery shelving stocked with loaves and baguettes — stock photograph, not Kompaan’s shop

    [CONFIRM differentiator 2]

This card is waiting on a verifiable fact, not an adjective.

  • Bakery interior with a counter and shelving, one adult with their back turned in the distance — stock photograph, not Kompaan’s shop

    [CONFIRM differentiator 3]

Three real reasons beat ten generic ones.

Wholesale and supply

The front door for cafés and restaurants.

A restaurant will not run a supply relationship through an Instagram DM. Standing weekly orders, delivery days, minimum volumes, invoicing and lead times all need a page.

Whether Kompaan supplies wholesale at all is unconfirmed. [CONFIRM whether they supply, minimums, delivery days and invoicing]. The form is built for the day the answer is yes.

Coffee and counter

Small, and secondary on purpose.

If there is coffee and somewhere to sit, it belongs here — in the background. This brand is a bakery first and the site should not pretend otherwise. [CONFIRM whether there is coffee, seating, and how many seats]

How to keep your bread

Real bread is not stored like supermarket bread.

Keeping, freezing and refreshing. Three minutes of reading that heads off the most common artisan-bakery complaint — “it went hard the next day”.
